- 1 bell pepper, chopped
- 2 green onions, sliced thinly
- 1 teaspoon garlic powder
- a pinch of cumin
- freshly ground black pepper, to taste
Instructions
- Thoroughly rinse 1 cup of long-grain white rice under cold water until the water runs clear.
- In a medium saucepan over medium heat, combine the rinsed rice with 2 cups of chicken broth.
- Bring it to a boil, then reduce heat to low and cover tightly.
- Allow it to simmer for 15-20 minutes or until all liquid is absorbed.
- While the rice is cooking, chop 1 bell pepper into small dice and slice 2 green onions thinly.
- Once the rice is cooked, remove it from heat and let it sit covered for another 5 minutes.
- Fluff the rice gently with a fork before folding in the chopped bell pepper, green onions, 1 teaspoon garlic powder, and a pinch of cumin and pepper.
- Stir everything together until well mixed.
- Adjust seasoning if necessary; feel free to add more spices or some chili flakes if you like things spicy!
