- 1 cup all-purpose flour, sifted
- 1/2 cup granulated sugar
- 1/2 cup unsweetened shredded coconut, finely shredded
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup melted butter (or coconut oil)
- 1 cup full-fat coconut milk
- 1/4 cup freshly squeezed lime juice
- 1 tablespoon agar-agar powder
- 3 tablespoons warm water
- 1/2 cup granulated sugar
- zest from one lime (about 1 tablespoon)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine all-purpose flour, granulated sugar, unsweetened shredded coconut, baking powder, and salt. Mix well until everything is evenly incorporated.
- Add melted butter (or coconut oil) and stir until crumbly.
- Press this mixture firmly into the bottom of an 8×8-inch baking pan lined with parchment paper.
- Bake for 10-12 minutes or until lightly golden.
- In another bowl, whisk together full-fat coconut milk and freshly squeezed lime juice until combined.
- In a small saucepan over medium heat, dissolve agar-agar powder in warm water. Stir until fully dissolved—this should take about 3-5 minutes.
- Once dissolved, add this mixture to your coconut-lime blend while whisking continuously.
- Add granulated sugar along with zest from one lime. Whisk everything together until smooth and combined.
- Once your crust has finished baking and cooled slightly, pour the creamy filling over the crust evenly using a spatula.
- Refrigerate the assembled bars for at least two hours or until they are fully set.
- When ready to serve, lift the bars out using the parchment paper edges and slice them into squares or rectangles as you prefer.
- Garnish with additional shredded coconut or fresh lime zest if you’re feeling fancy.
Notes
Store bars in airtight container.
Serve chilled for best flavor.
Top with whipped cream garnish.
