  • 1 cup strong coffee or espresso, brewed and cooled
  • 2 tablespoons sugar, for coffee mixture

  • 1/2 cup granulated sugar, for filling
  • 1 cup heavy cream, whipped until stiff peaks form
  • fresh raspberries, ripe and firm, quantity as desired
  • ladyfingers, quantity as needed
  • 1 teaspoon vanilla extract

Instructions

  1. Brew about one cup of strong coffee or espresso and allow it to cool completely.
  2. Once cooled, stir in 2 tablespoons of sugar until dissolved.
  3. In a microwave-safe bowl, break apart 8 ounces of high-quality white chocolate.
  4. Microwave in 20-second intervals, stirring in between until fully melted and smooth.
  5. Let it cool slightly while you prepare other components.
  6. In a large mixing bowl, combine 8 ounces of softened cream cheese and 1/2 cup of granulated sugar.
  7. Beat with an electric mixer until smooth and creamy (about 2 minutes).
  8. Gradually fold in 1 cup of heavy cream until well combined.
  9. Gently fold the melted white chocolate into the cream cheese mixture using a spatula until completely incorporated.
  10. Quickly dip each ladyfinger into the cooled coffee mixture for about one second on each side.
  11. Layer half of these soaked ladyfingers at the bottom of your serving dish.
  12. Spread half of your luscious white chocolate filling over the ladyfingers.
  13. Sprinkle half of your fresh raspberries on top.
  14. Repeat with another layer of soaked ladyfingers followed by the remaining filling and raspberries.
  15. Chill your masterpiece in the refrigerator for at least four hours or overnight if you can resist diving in sooner.
  16. Garnish with additional raspberries just before serving.
