- 2 cans canned white beans, drained and rinsed
- 4 fresh tomatoes, sliced
- 2 cups shredded cheese (mozzarella and sharp cheddar blend)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine two cans of drained and rinsed white beans with minced garlic and a generous drizzle of olive oil.
- Stir until well combined.
- In a baking dish, spread half of the bean mixture evenly on the bottom.
- Layer in half of your sliced fresh tomatoes over the beans.
- Sprinkle with Italian seasoning and half of your shredded cheese.
- Repeat the layering process by adding the remaining bean mixture on top of the tomatoes.
- Finish off with another layer of sliced tomatoes.
- Sprinkle on any remaining Italian seasoning followed by the rest of your shredded cheese.
- Pop your baking dish into the preheated oven and let it bake for about 25-30 minutes or until everything is bubbly and golden brown on top.
- Garnish with fresh herbs like basil or parsley right before serving.
Notes
Store leftovers in airtight container. This keeps the dish fresh longer.
Reheat in the oven for best results. Microwaving may make it soggy.
