Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans with non-stick spray or butter and line them with parchment paper.
  2. In a large bowl, whisk together 2 cups of all-purpose flour, 1 ½ teaspoons of baking powder, and ½ teaspoon of salt until well combined.
  3. In another bowl, beat together ¾ cup unsalted butter and 1 cup granulated sugar until light and fluffy—about 3-4 minutes using an electric mixer on medium speed.
  4. Add in 3 large eggs one at a time, mixing well after each addition. Slowly pour in 1 cup whole milk until everything is combined smoothly.
  5. Gradually add your dry ingredients into the wet mixture, stirring gently until just combined. Fold in ½ cup cherry preserves.
  6. Divide the batter evenly between your prepared pans. Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted into the center comes out clean. Let them cool in their pans for about 10 minutes before transferring them onto wire racks.
  7. While your cakes cool down, make your frosting by beating together 8 oz softened cream cheese, ½ cup unsalted butter (softened), and 2 cups powdered sugar until smooth. Then mix in ½ cup sour cream until everything is perfectly blended.
  8. Once cooled completely, place one layer on a serving plate. Spread half of your frosting over this layer followed by more cherry preserves if desired. Top with the second layer and frost generously around the sides too.
  9. For an optional touch of elegance, sprinkle semi-sweet chocolate shavings on top or decorate with fresh cherries if you prefer. Slice generously and serve immediately.
