- 1 ½ cups crushed chocolate cookies
- ½ cup melted butter
- 2 cups pitted fresh cherries
- ¼ cup sugar
- 1 tablespoon agar-agar
- 3 tablespoons water
- 8 ounces cream cheese, softened
- ¾ cup powdered sugar
- ½ cup heavy cream
- ½ cup unsweetened cocoa powder
- 1 cup heavy cream (for topping)
- 1 tablespoon powdered sugar (optional for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine 1 ½ cups of crushed chocolate cookies with ½ cup of melted butter.
- Stir until well mixed and resembles wet sand.
- Press this mixture firmly into the bottom and sides of a 9-inch pie pan.
- Bake in the preheated oven for 10 minutes until slightly firm.
- Let it cool completely.
- In a saucepan over medium heat, combine 2 cups of pitted fresh cherries and ¼ cup of sugar.
- Cook until the cherries release their juices, about 5-7 minutes.
- Remove from heat.
- In another small bowl, dissolve 1 tablespoon of agar-agar in 3 tablespoons of water and mix into the cherry mixture while it’s still warm.
- Allow this mixture to cool slightly before proceeding.
- In a large mixing bowl, beat together 8 ounces of softened cream cheese with ¾ cup of powdered sugar until smooth.
- Gradually add in ½ cup of heavy cream followed by ½ cup of unsweetened cocoa powder.
- Beat until light and fluffy—approximately 3-4 minutes.
- Gently fold half of the cooled cherry mixture into the chocolate cream filling to create a marbled effect.
- Pour this delightful mixture into your cooled chocolate crust and spread evenly.
- Spoon the remaining cherry mixture on top of the chocolate filling in swirls or dollops as desired.
- Refrigerate your pie for at least four hours or overnight if possible to allow it to set properly.
- Before serving, whip an additional cup of heavy cream until soft peaks form—add a tablespoon of powdered sugar if you like it sweeter!
- Spread or pipe this fluffy cream generously over your set pie for that final touch.
Notes
Store leftovers in an airtight container.
Serve chilled, no need to reheat.
