Instructions
- Preheat your oven to 350°F.
- In a large mixing bowl, use an electric mixer at medium speed to cream together the unsalted butter and sugar until light and fluffy—about 3-4 minutes.
- Mix in the vanilla extract until combined.
- Gently fold in the chopped maraschino cherries with a spatula until they're evenly distributed throughout your mixture.
- In another bowl, whisk together the all-purpose flour and salt.
- Gradually add the dry mixture into your wet mixture, stirring just until combined.
- Scoop tablespoon-sized portions of dough onto ungreased baking sheets, spacing them about two inches apart.
- Bake in your preheated oven for 12-15 minutes or until they are lightly golden around the edges.
- Once baked, let them cool on the baking sheet for about five minutes before transferring them to wire racks.
