Instructions
- Peel and finely grate about two tablespoons of fresh horseradish root using a box grater or food processor.
- In a medium mixing bowl, add one cup of sour cream and half a cup of mayonnaise.
- Stir these together until they form a silky mixture.
- Squeeze in two tablespoons of freshly squeezed lemon juice and mix well.
- Season with half a teaspoon of salt and freshly cracked black pepper to taste.
- Gently fold the grated horseradish into your creamy mixture until evenly distributed.
- Cover the bowl with plastic wrap and let it chill in the refrigerator for at least 30 minutes.
- Garnish with a sprinkle of fresh chives or parsley if desired.
- Serve immediately alongside grilled meats, roasted vegetables, or as an unexpected sandwich spread.
