- 2 cups sweet rice flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1 cup milk (or plant-based alternative)
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla extract

Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine sweet rice flour, granulated sugar, and baking powder. Whisk them together until they resemble a fluffy cloud.
- In another bowl, whisk together milk (or plant-based alternative), vegetable oil, and vanilla extract until well blended.
- Pour the wet ingredients into the dry ingredients gradually. Stir until just combined; do not overmix.
- Spoon the batter into a greased donut pan, leaving some space for the donuts to rise.
- Pop your donut pan in the oven and bake for about 15-20 minutes or until they’re golden brown and spring back when lightly pressed.
- Once baked, let them cool in the pan for about five minutes before transferring them to a wire rack.
- While they cool down, whip up your glaze by mixing powdered sugar with fruit juice or milk until it reaches your desired consistency.
- Dip each cooled donut into your glaze or drizzle it on top. Add sprinkles immediately after glazing.
Notes
Store mochi donuts in airtight container.
Reheat briefly in microwave, enjoy warm.
Serve with dipping sauces for fun.
