  • 1 cup coconut cream, full-fat
  • 1 cup pineapple juice, fresh or canned
  • 2 tablespoons agar-agar powder

Instructions

  1. In a small saucepan, combine 1 cup of coconut cream and 2 tablespoons of agar-agar powder.
  2. Stir well over medium heat until the agar-agar completely dissolves, which should take about 5 minutes.
  3. Once dissolved, add in 1 cup of fresh pineapple juice and ½ cup of granulated sugar to the pan.
  4. Stir continuously as you bring this mixture just to a simmer over medium heat—don’t let it boil.
  5. Remove from heat and stir in 1 teaspoon of vanilla extract for that extra oomph!
  6. Carefully pour the mixture into serving cups or molds of your choice.
  7. Let them cool at room temperature before transferring them to the refrigerator.
  8. Refrigerate your panna cotta for at least 4 hours or until fully set.
