- 1 cup coconut cream, full-fat
- 1 cup pineapple juice, fresh or canned
- 2 tablespoons agar-agar powder
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- Fresh pineapple chunks, optional
Instructions
- In a small saucepan, combine 1 cup of coconut cream and 2 tablespoons of agar-agar powder.
- Stir well over medium heat until the agar-agar completely dissolves, which should take about 5 minutes.
- Once dissolved, add in 1 cup of fresh pineapple juice and ½ cup of granulated sugar to the pan.
- Stir continuously as you bring this mixture just to a simmer over medium heat—don’t let it boil.
- Remove from heat and stir in 1 teaspoon of vanilla extract for that extra oomph!
- Carefully pour the mixture into serving cups or molds of your choice.
- Let them cool at room temperature before transferring them to the refrigerator.
- Refrigerate your panna cotta for at least 4 hours or until fully set.
- Once firm, gently run a knife around the edges if you're using molds, then invert onto plates if desired.
- Top with fresh pineapple chunks or shredded coconut before serving for added texture and flair.
- Garnish with mint leaves for an extra pop of color—and serve immediately to enjoy this dreamy dessert!
