- 1 cup graham cracker crumbs
- 1/2 cup unsweetened shredded coconut
- 1/4 cup melted butter (or coconut oil)
- 1 cup sweetened condensed milk
- 1/2 cup fresh lime juice
- zest from 2 limes
- 2 teaspoons agar-agar powder
Instructions
- Preheat your oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper, leaving some overhang on the sides.
- In a large mixing bowl, combine 1 cup of graham cracker crumbs and ½ cup of unsweetened shredded coconut. Pour in ¼ cup of melted butter (or coconut oil) and stir until everything is nicely coated. Press this mixture firmly into the bottom of the prepared baking dish using the back of a measuring cup.
- In another bowl, combine 1 cup of sweetened condensed milk with ½ cup of fresh lime juice and zest from two limes. Sprinkle in 2 teaspoons of agar-agar powder and whisk well until fully incorporated.
- Place the crust into the preheated oven and bake for about 10 minutes until lightly golden brown. Remove it from the oven and let it cool slightly while you prepare the filling.
- Pour the lime filling over your cooled crust evenly. Return it to the oven and bake for an additional 15-20 minutes until it’s set but still slightly wobbly in the center.
- Once baked, remove from oven and let it cool at room temperature for about an hour before transferring it to the refrigerator. Chill for at least two hours or until completely firm.
- Serve chilled by lifting out using parchment paper edges, slicing into squares, and garnishing with extra shredded coconut or lime zest if desired.
Notes
Store bars in an airtight container.
Enjoy chilled; no reheating needed.
Top with fresh coconut flakes.
Use freshly squeezed lime juice.
