- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, cold and cut into small cubes
- ¼ cup powdered sugar, sifted
- 1 large egg yolk
- Zest of 2 large oranges
- 1 cup fresh orange juice, freshly squeezed
- ¾ cup granulated sugar
- 3 tablespoons cornstarch
- 1 tablespoon agar-agar powder, dissolved in warm water
- Powdered sugar (for dusting), optional
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the flour and powdered sugar.
- Add the cold butter cubes and mix until crumbly.
- Then add in the egg yolk.
- Mix until just combined; you want it to hold together without being sticky.
- Press the dough into a tart pan evenly across the bottom and up the sides.
- Prick it with a fork and chill in the fridge for about 15 minutes.
- Bake for 20-25 minutes until golden brown.
- Let it cool completely on a wire rack.
- In another bowl, whisk together granulated sugar, cornstarch, and orange zest until well combined.
- In a saucepan over medium heat, combine fresh orange juice and your dry mixture.
- Stir constantly until it thickens (about 5-7 minutes).
- Once thickened, remove from heat and stir in dissolved agar-agar until fully incorporated.
- Pour this luscious filling into your cooled crust.
- Refrigerate your tart for at least two hours or until set firmly.
- Once set, dust with powdered sugar before serving.
- Garnish with fresh orange slices or whipped cream if desired.
- Serve immediately.
Notes
Store the tart in airtight container.
Reheat slices in a warm oven.
