  • Zest of 2 large oranges
  • 1 cup fresh orange juice, freshly squeezed
  • ¾ cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon agar-agar powder, dissolved in warm water
  • Powdered sugar (for dusting), optional

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour and powdered sugar.
  3. Add the cold butter cubes and mix until crumbly.
  4. Then add in the egg yolk.
  5. Mix until just combined; you want it to hold together without being sticky.
  6. Press the dough into a tart pan evenly across the bottom and up the sides.
  7. Prick it with a fork and chill in the fridge for about 15 minutes.
  8. Bake for 20-25 minutes until golden brown.
  9. Let it cool completely on a wire rack.
  10. In another bowl, whisk together granulated sugar, cornstarch, and orange zest until well combined.
  11. In a saucepan over medium heat, combine fresh orange juice and your dry mixture.
  12. Stir constantly until it thickens (about 5-7 minutes).
  13. Once thickened, remove from heat and stir in dissolved agar-agar until fully incorporated.
  14. Pour this luscious filling into your cooled crust.
  15. Refrigerate your tart for at least two hours or until set firmly.
  16. Once set, dust with powdered sugar before serving.
  17. Garnish with fresh orange slices or whipped cream if desired.
  18. Serve immediately.
