Instructions
- Brew your favorite coffee and let it cool completely.
- In a medium bowl, whisk together cooled brewed coffee, coconut milk, maple syrup, and vanilla extract until well blended.
- Sprinkle in chia seeds while stirring continuously to avoid clumps.
- Cover the bowl with plastic wrap or transfer to jars with lids and refrigerate for at least four hours or overnight.
- Once set, stir the pudding, scoop into serving dishes and garnish with chopped pecans or fresh fruit if desired.
- Feel free to swap out toppings based on what’s available in your pantry.
