- 1 ripe pineapple, chopped into small chunks
- 1 cup all-purpose flour
- 1 tablespoon granulated sugar
- 1 teaspoon baking powder
- 1/2 cup coconut milk
- 1/2 teaspoon cinnamon (optional)
- Vegetable oil for frying, high smoke point like sunflower or canola
Instructions
- Start by peeling, coring, and chopping your pineapple into small chunks.
- In a large mixing bowl, whisk together all-purpose flour, granulated sugar, baking powder, and cinnamon.
- In another bowl, mix coconut milk until it's nice and smooth. Gradually pour this mixture into your dry ingredients while stirring gently until combined.
- Carefully fold in the pineapple chunks into your batter using a rubber spatula.
- In a deep skillet or heavy-bottomed pot, heat about 2 inches of vegetable oil over medium heat (around 350°F). Once hot, carefully spoon in heaping tablespoons of batter with pineapple chunks. Fry until golden brown on both sides.
- Using a slotted spoon, remove fritters from hot oil and let them drain on paper towels to soak up excess grease. Garnish with powdered sugar or serve with honey drizzled on top.
Notes
Store leftover fritters in airtight container.
Reheat in an air fryer for crispiness.
Serve with vanilla ice cream drizzle.
