- 1 cup cottage cheese, low-fat
- 2 tablespoons lemon juice, freshly squeezed
- 1 tablespoon honey or maple syrup
- 1 cup fresh blueberries
- 2 tablespoons chia seeds
- 1/2 teaspoon vanilla extract
- 1 tablespoon agar-agar powder
- 1/4 cup water
Instructions
- Start by gathering all your ingredients.
- In a bowl, combine 1 cup of cottage cheese with 2 tablespoons of freshly squeezed lemon juice and 1 tablespoon of honey or maple syrup.
- Using an immersion blender (or regular blender), blend the mixture until it’s smooth and lump-free.
- Fold in 1 cup of fresh blueberries gently so as not to crush them completely.
- Sprinkle in 2 tablespoons of chia seeds and half a teaspoon of vanilla extract for extra flavor.
- In a small saucepan over low heat, mix 1 tablespoon agar-agar powder with 1/4 cup water until dissolved.
- Stir the dissolved agar-agar into your cottage cheese mixture quickly before it starts setting.
- Spoon or pour your mixture into silicone molds or mini muffin tins lined with paper cups for easy removal later.
- Place your molds in the refrigerator for at least two hours or until set completely.
- Once ready, pop them out carefully and serve chilled.
Notes
Store in an airtight container.
Enjoy cold or at room temperature.
Serve with a drizzle of honey.
