  • 1/2 teaspoon vanilla extract
  • 1 tablespoon agar-agar powder
  • 1/4 cup water

Instructions

  1. Start by gathering all your ingredients.
  2. In a bowl, combine 1 cup of cottage cheese with 2 tablespoons of freshly squeezed lemon juice and 1 tablespoon of honey or maple syrup.
  3. Using an immersion blender (or regular blender), blend the mixture until it’s smooth and lump-free.
  4. Fold in 1 cup of fresh blueberries gently so as not to crush them completely.
  5. Sprinkle in 2 tablespoons of chia seeds and half a teaspoon of vanilla extract for extra flavor.
  6. In a small saucepan over low heat, mix 1 tablespoon agar-agar powder with 1/4 cup water until dissolved.
  7. Stir the dissolved agar-agar into your cottage cheese mixture quickly before it starts setting.
  8. Spoon or pour your mixture into silicone molds or mini muffin tins lined with paper cups for easy removal later.
  9. Place your molds in the refrigerator for at least two hours or until set completely.
  10. Once ready, pop them out carefully and serve chilled.
