- 1 cup fresh spinach, washed and chopped
- 1/2 cup crumbled feta cheese
- 1 cup shredded mozzarella cheese
- 1/2 thinly sliced red onion
- 1 tablespoon olive oil
- garlic powder, to taste
- pepper flakes, optional, to taste

Instructions
- In a large mixing bowl, combine 1 cup of fresh spinach (washed and chopped), ½ cup crumbled feta cheese, 1 cup shredded mozzarella cheese, and ½ thinly sliced red onion.
- Add a pinch of garlic powder and pepper flakes if you like things zesty!
- Stir until everything is evenly mixed.
- Place a non-stick skillet over medium heat and add about 1 tablespoon of olive oil.
- Allow it to heat up until shimmering but not smoking.
- Lay one tortilla flat on a clean surface.
- Spoon half of your filling mixture onto one half of the tortilla.
- Fold the other half over like a taco; press down gently to ensure it stays closed while cooking.
- Carefully transfer the folded quesadilla into your hot skillet.
- Cook for about 3-4 minutes on each side or until both sides are beautifully golden brown and the cheese is melted.
- Remove the cooked quesadilla from the pan and let it cool slightly before cutting it into wedges.
- Garnish with fresh herbs if you have them on hand and serve immediately.
Notes
Store leftover quesadillas in airtight containers.
Reheat quesadillas in a skillet for crispness.
Serve with tzatziki or salsa dip.
