  • large flour tortillas

Instructions

  1. In a large mixing bowl, combine 1 cup of fresh spinach (washed and chopped), ½ cup crumbled feta cheese, 1 cup shredded mozzarella cheese, and ½ thinly sliced red onion.
  2. Add a pinch of garlic powder and pepper flakes if you like things zesty!
  3. Stir until everything is evenly mixed.
  4. Place a non-stick skillet over medium heat and add about 1 tablespoon of olive oil.
  5. Allow it to heat up until shimmering but not smoking.
  6. Lay one tortilla flat on a clean surface.
