- 4 medium-sized fresh peaches, sliced
- 2 cups all-purpose flour, sifted
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 1 cup whole milk
- 1/2 cup brown sugar, for frosting
- 8 ounces cream cheese, softened
- 2 cups powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans with butter and line the bottoms with parchment paper.
- Wash and slice four medium-sized fresh peaches. Set aside those peachy beauties.
- In a large bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of baking powder, and a pinch of salt.
- In another bowl, cream together ¾ cup of softened unsalted butter and 1 cup of granulated sugar using an electric mixer until fluffy. Add in two large eggs one at a time along with 1 teaspoon of vanilla extract until well combined.
- Gradually add the dry ingredients into the wet mixture, alternating with 1 cup of milk. Fold in the peach slices gently after everything is mixed together.
- Divide the batter evenly between the prepared pans. Bake for about 25-30 minutes or until a toothpick inserted comes out clean. Let them cool in their pans for about 10 minutes before transferring them to wire racks.
- While your cakes cool down, beat 8 ounces of softened cream cheese and ½ cup of softened unsalted butter together until creamy. Gradually add in 2 cups of powdered sugar along with ½ cup of brown sugar until smooth.
- Once your cakes are completely cooled, place one layer on your serving plate. Spread half of the brown sugar frosting on top. Place the second layer on top and frost generously over the entire cake.
Notes
Store cake in an airtight container.
Reheat slices in the microwave briefly.
Serve with whipped cream topping.
