  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 pound ground turkey
  • 2 cups sauerkraut, drained
  • 1 cup cheddar cheese, shredded
  • 1 cup panko breadcrumbs
  • 2 tablespoons olive oil
  • black pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add 1 tablespoon of olive oil and heat until shimmering.
  3. Toss in one chopped onion and three minced garlic cloves; sauté until translucent, about 5 minutes.
  4. Add one pound of ground turkey to the skillet.
  5. Break it up with a spatula while it cooks through completely, about 6-8 minutes.
  6. Season generously with black pepper as it cooks.
  7. Once the turkey is browned, stir in two cups of drained sauerkraut into the skillet.
  8. Mix well until everything is combined and heated through.
  9. Transfer the turkey-sauerkraut mixture into a greased 9×13 inch baking dish.
  10. Sprinkle one cup of shredded cheddar cheese evenly over the top.
  11. In a small bowl, combine one cup of panko breadcrumbs with two tablespoons of olive oil until evenly coated.
  12. Spread this mixture over the cheese layer in an even layer.
  13. Place your casserole in the preheated oven and bake for about 25-30 minutes until bubbly and golden brown on top.
